Scotch Eggs

I absolutely LOVE Scotch Eggs!  You can usually find them at Celtic restaurants and Brittish pubs but usually they are inconvienient to get to or just too expensive to enjoy like one would really want to.  I got a craving for Scotch Eggs the other day and decided to try my hand at making them.

Super easy, relatively quick (all things considered) and VERY tasty!

Here is the recipe I followed:

For 6 eggs:

6 eggs, hard boiled and peeled
2 standard rolls of sausage  (I used Jimmy Dean "Regular" sausage for the flavor)
Bread crumbs (I bought a can from Wal-Mart)
1 egg -uncooked

Divide sausage into 6 equal portions. On a lightly breadcrumb-sprinkled surface, pat out each portion to about 1/8 in thickness. Wrap portions completely around each of the hard boiled eggs, pressing edges together to seal.

Set wrapped eggs in a pan and place in fridge for an hour.

Dip sausage-coated eggs in beaten egg, then roll in breadcrumbs. Place on baking tray and bake in preheated 400 degree oven until lightly browned, about 40 minutes.

Serve with spicy mustard
